I never in a million years would have thought a year ago I would be working on a menu for our little lunch counter. Heck a year ago I would never have thought Ken would retire and we would buy a store! You just never know where life will take you.
So, folks ask us daily when we will be serving food. We even had a lady call last week and ask if we were serving lunch. I felt so bad I almost invited her over for a turkey sandwich and some chips. That is the best I can do for now.
We are working on getting that kitchen in. It's not moving as fast as Ken and I would like but that's the way it goes. We have a carpenter coming this week to start the work that needs to be done on the floors so we can move some things around. Patience isn't our strong suit and we want the kitchen does as much as everyone that is asking about it.
What I can tell you is we will serve breakfast, lunch, and an assortment of baked goods. Here are a few things we are thinking about serving...homemade biscuits, sausage biscuits, pigs in a blanket, bagels and cream cheese, and grits. For lunch we are looking at serving hotdogs and homemade chili, chili fritos, chicken salad, macaroni salad, and maybe a club sandwich. We plan to cook a few Cajun items also. Maybe some red beans and rice, gumbo, jambalaya, roast beef po boys and boudin. Some of the baked goods will include: pecan pies, cookies, cinnamon rolls, and who knows what else! We are still in the planning process on the menu. We want to keep it simple but provide good homemade food.
